Bruschetta
Ingredients:
4 Roma tomatoes
2 garlic cloves, minced and divided
olive oil
balsamic vinegar
salt and pepper to taste
basil, chopped/torn
1 baguette
Balsamic glaze reduction
Remove insides of tomatoes and chop. Mince 1 garlic clove and add to the tomatoes. Chop 6-8 basil leaves and add to the mixture. Drizzle olive oil and balsamic vinegar over the tomatoes. Season to your taste with salt and pepper. Slice baguette into 1/2 inch pieces. Chop the other garlic clove and put in a shallow dish or plate. Drizzle with more olive oil. Dip one side of your bread slice into the garlic/olive oil and put on a baking sheet. Bake bread at 400 for 7-10 minutes or until crisp/toasted. Top each slice of bread with the tomato mixture. Drizzle with balsamic reduction and serve!
