Granny’s Vegetable Soup

Ingredients:
Fat back (5-10 pieces)
Olive oil
2 onions, chopped
1.5 pounds of ground beef
28 ounce can of tomato sauce
28 ounce can of diced tomatoes
1 large can of green beans, drained
1 can of peas
4 ears of corn, cut off the cob
32 ounces of chicken broth
salt and pepper
1/2 cup of ketchup
Frozen or fresh okra (12 ounces)
Water
Any other veggies you prefer (potatoes, butter beans, etc.)

Instructions:

Coat the bottom of a pot with olive oil, add fat back and fry until crisp. Remove fatback from pot. You can add it back later or discard it completely. In the grease from the fatback, add your two chopped onions and sauté until translucent. Add your ground beef and brown. Add your tomato sauce, diced tomatoes, green beans, peas, corn, chicken broth, salt and pepper to taste, and ketchup. Let cook on medium low heat for 45 minutes. Before you wish to serve it, add in your frozen okra. If your soup is too thick for you, add a cup of water at a time until it is a consistency of your liking!
