Tuscan Chicken

I found a recipe similar to this on TikTok, but of course made my own changes. I intended to make this to serve with pasta, but at the last minute decided to serve it over mashed potatoes. It was DELICIOUS! Zach even said it would be good with tortellini pasta. Definitely plan to try that. The sauce is 10/10!

Ingredients:
4-6 boneless, skinless chicken thighs or breasts
1 jar of sun-dried tomatoes in oil (you won’t use the entire jar)
Salt, pepper, paprika, garlic powder, onion powder, oregano, Italian seasoning
8 ounces of mushrooms
1/2 an onion, chopped
1 tablespoon of garlic, minced
8 sun-dried tomatoes, chopped
2 cups of heavy cream
1/2 cup of parmesan cheese
2 handfuls of spinach
1/4 cup of butter

Begin by seasoning your chicken on both sides. Pour one tablespoon of the oil from the sun-dried tomatoes into a skillet over medium heat. Add chicken and cook on both sides for about 5-6 minutes per side or until cooked through. Remove chicken from the pan. If needed, add more sun-dried tomato oil. Add onion and garlic into the oil and cook for 3 minutes, or until fragrant and onions translucent. Add in butter and mushrooms. Cook mushrooms in butter until golden. If needed, add some chicken stock to deglaze the pan. Add in the chopped sun-dried tomatoes and cook for a few minutes. Next, add in your heavy cream and seasonings and bring to a simmer. Add in the spinach and parmesan cheese. Once everything is added and mixed well, add in your chicken and turn to low. Serve over pasta or mashed potatoes.
