Pork Tenderloin
Ingredients:
3 pound pork loin
4 -6 garlic cloves, sliced or whole
1/2 tablespoon kosher salt
1/2 tablespoon of paprika
1/2 tablespoon of garlic powder
1/2 tablespoon of parsley flakes
1/2 teaspoon black pepper
8 ounces of mushrooms, sliced (optional)
1 onion, sliced (optional)
Directions:
Set meat out and allow to come to room temperature. Preheat oven to 375. Line a baking dish with tin foil. Spray the tin foil with cooking spray. Lay meat fat side down in the dish. Poke small holes with a paring knife throughout the meat. Push slices of the garlic cloves or whole cloves into the meat. Season with salt, pepper, paprika, garlic powder, or any seasonings of choice. Flip meat over and season the fat side. Arrange mushrooms and onions around the meat if using. Bake uncovered for 60-75 minutes or until the meat reaches 150-160 degrees internal temperature. Move to a cutting board and tent with foil. Allow to rest for 10 minutes before slicing.
