    Taco Soup

    Ingredients:1 pound of ground beef1 large can of petite diced tomatoes1 can rotel1 can of corn1 can of kidney beans, drained1 can of black beans, drained1 ranch packet1 cup of water1 packet of taco seasoning Directions:Brown your meat, add all your veggies, water, and seasonings. Bring to a boil and let simmer for 15-20 minutes. Serve with cheese, sour cream, etc.

    Spaghetti 2.0

    This recipe is so similar to my classic spaghetti recipe. The only difference is some extra sugar and different tomatoes, but this one has become my current favorite!     Stuffed Meatballs in a Tomato Cream Sauce

    Ingredients:Meatballs:1 pound of ground beef2-3 mozzarella cheese sticks, chopped into bite sized piecesseasonings of choice Tomato Cream Sauce:6 ounce can of tomato paste15 ounce can of tomato sauce1 cup of heavy creampaprika to tastebasil to taste Directions:Heat oven to 350. Mix meat with seasonings of choice (I use garlic powder, onion powder, Italian seasoning, Worcestershire sauce, seasoning salt, and pepper). Roll into balls. Cut cheese sticks into bite sized pieces. Push cheese into the center of the meatball and seal. Place meatballs on sprayed parchment paper.     Mississippi Pot Roast

    Ingredients:1-3 pound chuck roast1 packet of ranch seasoning1 packet of beefy onion soup mix1 stick of butter8 peperoncini pepper Directions:Season meat with salt and pepper. Sear meat on each side. Place roast in the crockpot and set to low. Sprinkle ranch packet and onion soup mix packet over top the roast. Place peppers around the roast and put the stick of butter on top. Let roast cook for 8-10 hours and shred before serving. *Hot tip: Serve leftover for lunch the next day on Hawaiian rolls with lots of juice. SO good!

    Pork Tenderloin

    Ingredients:3 pound pork loin4 -6 garlic cloves, sliced or whole1/2 tablespoon kosher salt1/2 tablespoon of paprika1/2 tablespoon of garlic powder1/2 tablespoon of parsley flakes1/2 teaspoon black pepper8 ounces of mushrooms, sliced (optional)1 onion, sliced (optional) Directions:Set meat out and allow to come to room temperature. Preheat oven to 375. Line a baking dish with tin foil. Spray the tin foil with cooking spray. Lay meat fat side down in the dish. Poke small holes with a paring knife throughout the meat.     Traditional Pot Roast

    Ingredients:1- 3 pound chuck roast2 tablespoons of olive oilsalt and pepper2 envelopes of Lipton Beefy Onion soup mix2 cups of water4-5 medium potatoes, peeled and halved2-3 cups baby carrots2-3 onions, quartered2 tablespoons of cornstarch Directions:Season roast on both sides with salt and pepper. Heat olive oil in a large skillet on high heat. Sear each side of roast (and sides if thick enough) in hot skillet about 2 minutes or until nicely browned on each side.
