    Bang Bang Shrimp Tacos

    The easiest, quickest recipe and 10/10 tasty! Ingredients:1 lb frozen, breaded shrimp (I get SeaPak) Sauce:1 cup of mayonnaise1/2 cup sweet thai chili sauce1 teaspoon – 1 tablespoon of Sriracha (depending on how much heat you like)splash of vinegar Coleslaw:1 bag of coleslaw (I use the Angel Hair Coleslaw)1/2 cup of mayonnaise2 tablespoons of sugar1 1/2 tablespoons of lemon juice1 tablespoon of vinegar1/2 teaspoon of black pepper1/4 teaspoon of salt Recipe: Preheat AirFryer to 400 degrees. Air fry shrimp for 8 minutes, shaking half way through. Toss coleslaw ingredients. Mix sauce ingredients and toss with shrimp. Assemble coleslaw, then shrimp and enjoy!

    Homemade Manicotti

    Ingredients: Shells:2 eggs1/2 cup of flour1/2 cup of milk Filling:1 egg3 tablespoons of parmesan cheese32 ounces of ricotta cheesesalt and pepper to taste1/2 cup of mozzarella cheese Sauce of choice Directions:Mix together the egg, flour and milk. Spray pan with cooking spray. Ladle a small amount into a skillet and cook until it doesn’t stick in the pan. Flip and cook again. Remove and continue the process until all batter is used. Mix filling ingredients. Add 1-2 tablespoons into each shell and roll up. Cover the bottom of a 9×13 pan with red sauce of choice. Lay shells on top.     Ingredients:Fat back (5-10 pieces)Olive oil2 onions, chopped1.5 pounds of ground beef28 ounce can of tomato sauce28 ounce can of diced tomatoes1 large can of green beans, drained1 can of peas4 ears of corn, cut off the cob32 ounces of chicken brothsalt and pepper1/2 cup of ketchupFrozen or fresh okra (12 ounces)WaterAny other veggies you prefer (potatoes, butter beans, etc.) Instructions: Coat the bottom of a pot with olive oil, add fat back and fry until crisp.     Taco Soup

    Ingredients:1 pound of ground beef1 large can of petite diced tomatoes1 can rotel1 can of corn1 can of kidney beans, drained1 can of black beans, drained1 ranch packet1 cup of water1 packet of taco seasoning Directions:Brown your meat, add all your veggies, water, and seasonings. Bring to a boil and let simmer for 15-20 minutes. Serve with cheese, sour cream, etc.

    This recipe is so similar to my classic spaghetti recipe. The only difference is some extra sugar and different tomatoes, but this one has become my current favorite!     Stuffed Meatballs in a Tomato Cream Sauce

    Ingredients:Meatballs:1 pound of ground beef2-3 mozzarella cheese sticks, chopped into bite sized piecesseasonings of choice Tomato Cream Sauce:6 ounce can of tomato paste15 ounce can of tomato sauce1 cup of heavy creampaprika to tastebasil to taste Directions:Heat oven to 350. Mix meat with seasonings of choice (I use garlic powder, onion powder, Italian seasoning, Worcestershire sauce, seasoning salt, and pepper). Roll into balls. Cut cheese sticks into bite sized pieces. Push cheese into the center of the meatball and seal. Place meatballs on sprayed parchment paper.     Mississippi Pot Roast

    Ingredients:1-3 pound chuck roast1 packet of ranch seasoning1 packet of beefy onion soup mix1 stick of butter8 peperoncini pepper Directions:Season meat with salt and pepper. Sear meat on each side. Place roast in the crockpot and set to low. Sprinkle ranch packet and onion soup mix packet over top the roast. Place peppers around the roast and put the stick of butter on top. Let roast cook for 8-10 hours and shred before serving. *Hot tip: Serve leftover for lunch the next day on Hawaiian rolls with lots of juice. SO good!
